A Tarrazú cooperative know as the Cooperativa de Calicultores de Tarrazú RL (Coopetarrazu) has more than 4,640 members and runs like clockwork. They receive cherries from many small farms to process their coffee into a well-balanced regional blend. Cherries are picked and delivered the same day and then quickly weighed and placed into a large water tank to remove the less dense beans that float to the top. Using a recycling water system, the cherries are depulped and stripped of the mucilage from the beans. After removing excess water through forced air, the coffee is passed through a series of dryers. All of these processes, occur within the first 72 hours. Before being dehulled and milled for export, the coffee is rested for at least a month in silos.
Coopetarrazú members have access to low interest loans and healthcare in addition to income diversification with a profitable agriculture supply store and grocery store. It is a well oiled and efficient machine.
